Cut up 1/2 a watermelon into chunks and freeze for a least 24 hours. The next day or when wanting to make recipe. Let the watermelon defrost and blend.
Remove the rind from a large watermelon and cut it into chunks.
Place the chunks in a 1-gallon freezer bag and freeze for at least 24 hours.
When ready to make the sorbet, let the frozen watermelon sit at room temperature for about 20 minutes to soften slightly.
Add the watermelon chunks and lime juice to a blender, starting with a teaspoon of lime juice. Blend until smooth.
Pour into a bowl and garnish with fresh mint leaves if desired.
